Midweek Meal Planning

Seriously – how is it Wednesday already? I knew that I’ve been busy, but not busy enough to completely forget about planning out my week’s menu before the week was half gone! It’s probably not even worth truly planning out my menu, but I might as well plan it and post it here for posterity since I have to plan it before I can go grocery shopping tonight anyway!

I’ll skip Monday & Tuesday, since they’re over and done with and head straight into Wednesday.

Wednesday: Sweet Potato Pockets

Thursday: Lasagna and salad

Friday: Burgers with sweet potato fries

Saturday: Pasta con Broccoli with salad

Sunday: Book Club – the husband is on his own for dinner!

So, there it is – short and sweet. 😉 If I ever get this blogging thing down, I’ll start including pix and recipe reviews too. But, really that’s a mighty big IF! I’ve been trying this blog for well over a year now and it still leaves a bit to be desired!! c’est la vie.

I’m finding myself little inspired in the kitchen these days. :-/ It’s a little disheartening. I want to attribute it to the fact that I’m pretty busy with grad school and family stuff right now, but I think I’m affected also by the weather and the lack of exciting things at the grocery store. I have little occasion to cook – other than daily meals for myself and my husband – which doesn’t do much for inspiring the Kitchen Goddess in me.

I have a ton of cookbooks and am familiar with a ton of online resources – so planning meals should be easy, right? Maybe I’m inundated with *too many* choices. I need to get together a repertoire to make meal planning easier. *sigh*

So, without further ado, here is this week’s menu plan:

Monday: Penne with Blue Cheese and Squash^

Tuesday:  Slow Cooker Lemon Chicken* w/ Roasted Sweet Potatoes, Parsnips and Onions^

Wednesday: Potato & Carrot Soup^

Thursday: Pasta con Broccoli (a la The Pasta House)

Friday: Orange Almond Chicken*, Brown Rice, stir fried veggies

Saturday: MahiMahi Coconut Curry^ w/ Cardamom-Coconut Rice^

I must get back into planning my weekly menu! I wish I could pre-plan all of my meals, but that is more than I can do right now! I’m so uninspired at the moment, it takes me forever to do the most basic menu plan. O_o

The notations which you’ll see below, such as (8 p+), indicate the Weight Watchers PointsPlus value for the item. In addition to planning my meals, I am trying to be much more mindful of my points. I am actually having a really hard time eating *all* of my points in a day – probably b/c I do not make sure to get all of my dairy and oil in. :-/

WW’s Chicken & Black Bean Burritos* (8 p+) with veggies added

Tuesday 25

Easy Salmon Cakes (9 p+) with Creamy Dill Sauce (2 p+) and Salad (3 p+)

Wednesday 26

Weight Watchers’ Chicken and Sweet Potato Stew (5 p+)

Thursday 27

leftover Weight Watchers’ Chicken and Sweet Potato Stew (5 p+)

Friday 28

Boca Original Chik’n Patty (4 p+), 1/2 tsp of honey (0 p+), 1/2 tsp dijon mustard (0 p+), WW’s Sweet Potato Fries (4 p+)

Saturday 29

Baked Potato (5 p+) topped with 1/2 c. tuna (canned in water) (3 p+) and 1 oz of shredded cheese (3 p+)

Sunday 30

Snacking at Book Club. :-/ Not necessarily safe, BUT at least I’m planning for it! lol.

Our book this month is Island by Aldous Huxley, so I plan on making some island-inspired snacks.

Piña Colada Dipping Sauce

Banana-Papaya Salsa (but I’ll prolly have to sub out the papaya)

Sunday: Chicken & Sweet Potato Pocket Pies (from September 2010 issue of Everyday Food); acorn squash; green salad (didn’t make roasted green beans, had salad instead)

Monday: homemade Gnocchi (from September 2010 issue of Everyday Food);  (too late, too tired to make the green salad when finally done making the gnocchi!)

Tuesday: broiled pork chops; tomato tart (from September 2010 issue of Everyday Food); roasted green beans (having these tonight since we didn’t have them sunday)

Wednesday: Potato Soup

Thursday: Boca Chik’n patty sammie, tater babies

Friday: Elephant Souffle

Saturday: Vegetarian Black Bean Tostadas

well – this is the plan anyway…i think I did alright with it. Wednesday and Thursday are my busy nights with class, so I’ve tried to make it as quick and easy as possible those two nights. Husband will more than likely take any and all leftovers to work for dinner, so I can have “girly” meals the nights he’s working! lol…

P.S. (Tuesday) I doubt that I’m going to try and edit menu posts like this again – I’ll just keep it like I have been with posting a new entry showing the edits. WordPress isn’t saving my strike-outs, for one – and this is just kinda confusing. even for me.

Monday: Dinner Out – headed to the Royals vs Cubs game at the K courtesy of my friend and future-realtor Cullun Culp of Coldwell Banker, John Moffitt and Associates. 🙂

Tuesday: Salmon Cakes w/ Dill Mayo, Roasted Green Beans, French Bread

Wednesday:Mustard Dill Chicken, steamed veggies, steamed rice

Thursday: Spinachy Salad with Chicken

Friday: Coconut Shrimp Curry w/ brown rice

Saturday: work on leftovers from the week

(but, I’m toying with the idea of taking a road trip this weekend, but haven’t decided anything definitely yet)

I’ve been super bad about making menus and sticking to them lately – I don’t know what it is. :-/

I’ll skip Sunday and Monday, since dinner’s over and one with for both days already.

Tuesday: Salmon Patties (We really don’t eat as many salmon patties as it seems – i seem to never get around to making them when they’ve been put on the menu)

Wednesday: Meatloaf

Thursday: big ol’ spinachy salad.

I missed posting my Mindful Menu last week, as I spent the majority of my time at the hospital with my brother. (details here) As you can imagine, I didn’t really cook very much anyway, since husband works evenings and I was at the hospital! This week is back to a slightly more normal schedule, except that I start a weeklong temp-job on Thursday. Woo Hoo! 🙂

Mother’s Day Brunch

Mother’s Day kind of snuck on me this year – for some reason I was thinking that it was on the 16th and not the 9th! whoops!

Fortunately, my mom inadvertently reminded me and suggested we have a brunch at my house, as one of my aunt’s is flying back to Chicago that afternoon and I’m near the airport. 🙂

After consultation with the family, this is what we decided to have for the brunch:

It is a lot of food, but with picky eaters and about 15 people showing up, I think there will be a good variety and amount for everyone!

Now, back to cleaning up the house so this brunch can happen! 😀
